Apple Spice Muffins
Tonight I got to do something I haven't done for ages. I did some baking!!! I love to bake but Karen is now chief cake maker in this house. But she is out tonight ha ha - so I grabbed my chance. I made some Apple Spice Muffins and they are rather good - if I do say so myself.

Well, here is the recipe.
Apple Spice Muffins
Makes 10-12
9oz (250g) plain flour
3 teaspoons (15ml) baking powder
1/2 teaspoon (2.5ml) salt
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of ginger
3-4oz (85-110g) white granulated sugar
1 egg
5 fl oz (150ml) milk
6 oz (170g) finely chopped apples (any type, cored and peeled)
3oz (85g) melted butter
1. Prepare muffin tins. Preheat oven to 375-400oF (190-200oC).
2. In a large bowl, sift together (or stir well with fork): flour, baking powder, salt and spice. Stir in sugar.
3. In another bowl, beat egg with a fork. Stir in milk, followed by chopped apple and oil, melted butter.
4. Pour all of wet mixture into dry. Stir until just combined. The batter is quite thick, the apple will release juice as it cooks.
5. Spoon into tins. Bake for 20-25 minutes until tops are lightly browned and spring back when pressed gently.
Cool for several minutes to make removal easier.
There you have it - enjoy. We certainly did!!!
